Our philosophy of creation

The philosophy around the agricultural exploitation that gives us our precious olive oils is to carry out an environmentally responsible and sustainable activity, to maintain the highest quality standards in our production. Likewise, for our brand it is of vital importance to carry out production as an integrated cycle fully developed at Hacienda Guzmán. However, the raw material that we choose is as important as the process. Therefore, Hacienda Guzmán carries out three levels of selection:

Selection of the cultivation plots: throughout the year, the entire farm is monitored and during the season, the most suitable plots for harvesting are selected.

Manual collection of the best green fruit to ensure the highest quality of the olives that arrive at the mill.

Selection of the best oils by means of different analyses and tastings.

Olive Tree Selection

We choose the olive trees
that have a better fruit quality

The 340 hectares of Hacienda Guzmán have the Ecological certification of the Andalusian Committee of Ecological Agriculture (CAAE). Their irrigation, nutrition and pests are controlled. However, only those olive trees that have the best productivity and fruit quality will be selected as raw material for the production of HG Organic extra virgin olive oil.

Manual Harvesting

We ensure the most delicate
handling of our raw material

At Hacienda Guzmán olives are harvested manually in order to ensure the most delicate handling of our raw material. This fact, together with the partial green harvesting, provide more organoleptic complexity to the final product, achieving a Premium olive oil with a great intensity of flavour and aroma, as well as a high level of antioxidants, including polyphenols, ensuring longer product life.

We take the olives
to the oil mill immediately

Since the farm is next to the mill, this minimises the time from the olive harvest to the obtaining of the oil to less than 5 hours. This immediacy in the process helps to guarantee the high quality of the fruit, and therefore, the quality of the extra virgin from Hacienda Guzmán.

Olive Selection

We separate the olives that do not meet our quality standards before putting them in the mill

Just before being poured into the mill, the olives go through a manual selection in order to eliminate those fruits that are in poor condition, and to ensure that only olives at the appropriate level of maturity go to grinding.

Grinding

We crush the olives at a controlled temperature and time

The olives are ground by varieties and at a controlled temperature and time, to preserve the appropriate organoleptic characteristics. The result is an olive oil of the highest quality.

Storage

We keep our EVOO in stainless steel tanks at a controlled temperature

Selecting the Olive Oil

We select the highest quality oils of each of the stored varieties.

After grinding, the different batches are tasted and those that retain the best organoleptic properties are selected to be included in each of the products.

We bottle the EVOO in opaque containers for better conservation.

The packaging is opaque in all our ranges in order to guarantee the best preservation of EVOO. Its design has become an inherent part of HG's identity, having won international awards since the launch of its first unit on the market.
