The origin of tartare is not entirely clear. Some theories say that it comes from Asia, when the Tatar tribes put meat under the saddle of their horses. When riding, the meat would become tender. However, there is also a French theory that places it at the beginning of the 20th century, when it began to be consumed accompanied by tartar sauce

How to make a salmon and avocado tartare

1. First, mix the mayonnaise with the mustard, honey, balsamic vinegar,Hojiblanca Hacienda Guzmán Extra Virgin Olive Oil and a squeeze of lemon in a bowl.

2. Next, cut the salmon into small cubes and add it to this mixture, stirring well. Add the finely chopped onion to the mixture.

3. Peel the avocado and make slices with the help of a peeler. Put a little lemon on the bottom of the plate so that the avocado does not turn black. Place the salmon tartare on top with the help of a circular mould and finally decorate with the watercress leaves.
