How to make a salmon and avocado tartare

1. First, mix the mayonnaise with the mustard, honey, balsamic vinegar,Hojiblanca Hacienda Guzmán Extra Virgin Olive Oil and a squeeze of lemon in a bowl.

2. Next, cut the salmon into small cubes and mix very well in a bowl with the emulsion that has already been made. Add the finely chopped onion to the mixture.

3. Peel the avocado and remove slices with the help of a peeler. Put a little lemon in the bottom of the plate so that the avocado does not turn black. Place the salmon tartare on top with the help of a circular mold and finally decorate with the watercress leaves.
