Suckling pig meat is typical of the regions of Segovia and Ávila, although it is consumed throughout Spain, and increasingly in other countries, due to its exquisite flavour, as well as its juicy and crunchy texture at the same time.

This dish requires few ingredients for roasting, since the select quality of its meat does much of the cooking work. Make sure it is of good quality!

1. First, season the suckling pig with salt. Next, wrap the legs and tail in foil. Place the pieces on the oven tray on a wooden plate and with the skin side down.

2. Then add some water to the bottom of the tray. Preheat the oven to 150º-160º and bake for approximately 1 hour and a half.

3. Once the time has elapsed, turn the suckling pig over and spread the skin with white lard. Next, increase the oven temperature to 180º-190º and bake for 45 minutes.

4. Finally, increase the oven temperature with high heat from above so that the skin is crispy. Sauté the baby potatoes with the fresh thyme and the Coupage Hacienda Guzmán Extra Virgin Olive Oil.
