1. First, season the suckling pig with salt. Next, wrap the legs and tail with silver paper. Place the pieces on the oven tray on a wooden plate and with the skin side down.

2. Then add some water to the bottom of the tray. Preheat the oven to 150º-160º and bake for approximately 1 hour and a half.

3. Once the time has elapsed, turn the suckling pig over and spread the skin with white butter. Next, raise the oven temperature to 180º-190º and bake for 45 minutes.

4. Finally, raise the oven temperature with high heat from above so that the skin is crispy. Sauté the baby potatoes with the fresh thyme and the Coupage Hacienda Guzmán Extra Virgin Olive Oil.
