1. First, heat a frying pan on high heat and add a few drops of Manzanilla Hacienda Guzmán Extra Virgin Olive Oil. When it starts to smoke, brown the beef on all sides.

2. Next, preheat the oven to 200ºC. Season the meat with salt and freshly ground pepper and smear it with old-style mustard.

33. When the oven is at the right temperature, place the piece of meat on a wire rack. It is important to place the area with fat facing up.

4. Place a tray beneath it to collect the juices that the meat will release. This will then be used to make the gravy.

5. Finally, bake the meat for 10 minutes at 200ºC. Lower the temperature to 170ºC and continue baking for the necessary time until the desired point is reached. For rare meat, bake at 50º for 15 minutes; if you want roast beef medium done, bake at 60º for 19 minutes and if you like meat well done, bake at 70º for 23 minutes.

6. When finished cooking, remove the roast beef from the oven and let the juices settle for 20-30 minutes before slicing.

During this resting time, you can take the opportunity to make a sauce by transferring all the juices that were collected in the oven to a saucepan, add a tablespoon of butter and heat the mixture over low heat, stirring constantly with a whisk until you have a smooth gravy.
